Salad: Roasted Virginia beet salad. A bed of chicory, beet greens, watercress and leaf lettuce topped with a julienne of roasted red and gold beets, dressed with an olive oil, pickled beet juice, grain mustard and honey vinaigrette.

Chef Gil Zentgraf is a born and bred Baltimore native. A Navy veteran of Vietnam, Chef Gil began his career in General Electric, but a shocking event (15000 volts) radically changed his life.

Once he had recovered his senses (literally), he enrolled in Baltimore Culinary College and was nominated to the Alpha Beta Kappa Honor Society as one of the best students in his class. Following several positions in well-known Baltimore restaurants, Chef Gil is currently chef and proprietor of his own company, “About You Catering”.

Chef Lorraine Morrison: Although a Banker by profession, Lorraine Morrison's true calling into the fine arts of the culinary world is crowned by a Roasted Virginia Beet Salad that has garnered rave  reviews throughout Northeastern Canada. As a cooking enthusiast and culinary aficionado extraordinaire Lorraine Morrison will be assisted by Chef Gil Zentgraf in the preparation and delivery of this exquisite dish.
