
How to Make: Clams Casino
First you will need to gather up your ingredients. One dozen
Littleneck Clams, Parmesan cheese, bacon, butter, lemon pepper, lemon,
bread crumbs and some kosher or rock salt.

Line a baking pan with foil for quick clean up and make three rows of salt to
balance the clams.

Shuck the clams over a bowl to catch all the liquid and meat and select 12
shells and clean them thoroughly.

Place the shells onto the salt and press them in so they are level. We want all
the juices and flavors to stay in the shells.

Now put the clam meats back into the shells and get ready to build your
"Casinos"

While you were shucking the clams you were cooking the bacon. You saved the fat
and crumbled the pieces didn't you? Put the fat into a squeeze bottle.

Now put some bits on each clam and a few drops of the bacon fat.

Sprinkle with lemon pepper and a squeeze of fresh lemon, then top with some
Parmesan that went through a micro planer.

Now top with some plain bread crumbs...

Hit them with some paprika and some melted butter...

And pop them into a 350 degree F. oven for 5 minutes until just warmed
through...

Take them out and let them cool a minute or so...

Serve with some flat leaf parsley and lemon. Enjoy!!!
