Baked Potato Skins

Ingredients for Skins:


4 small russet potatoes
Olive oil cooking spray
Lawry’s Seasoned Salt, or your favorite seasoning
Naughty Nelly's Deadly Twelve Pepper Blend or a few cranks of the peppermill

Preparation:

Preheat the oven to 350 degrees F.

Scrub the potatoes and spray lightly with the olive oil spray. Place in the hot oven and cook for about an hour or until done. Remove from oven to cool until you can handle them.

Cut the potatoes in half lengthwise and scoop out the center of the potato into a bowl and set aside. Leave about a 1/4 - 1/3 inch layer of potato attached to the skin. Set the skins open side up on a sheet pan and spray the inside of the potato lightly with the olive oil spray and season. You could use any seasoning you like.

Return to the oven and cook for about 15 minutes or until the insides are golden and skins crispy. Now comes the fun part! Set out prepared topping and dress your skins.

Toppings could be or include any of the following: Guacamole, Sour Cream, Cheddar Cheese, Jack Cheese, Chives or Scallions, Salsa, Tabasco Sauce, Onions or Chili.

Chef’s Note: This is a good recipe because it creates more than one dish. Remember, you have the insides of the potatoes that you can use in other ways. Mash them while they are still hot and save for another meal, of just put them in a bag once they have cooled and make a nice breakfast hash tomorrow.
