Fingerling Potato and Ham Hash

I get excited when I know we are going to have a dinner of baked or smoked ham, because I know there will be a Potato and Ham Hash in the near future. Potato and ham just seem to go together perfectly in a hash, just like in a creamy casserole.

Ingredients:

1 pound fingerling potatoes
1 teaspoon salt
1 tablespoon olive oil
2 tablespoons butter
1 small yellow onion, diced
1/2 red bell pepper, diced
4 button mushrooms, sliced
1 cup cooked ham, diced
garlic salt to taste, or just salt
Naughty Nelly's Deadly Twelve Pepper Blend or a few cranks of the peppermill, to taste

Preparation:

Wash the potatoes thoroughly and slice into half inch pieces. Rinse the potatoes and place them in a pot with the salt and cover with cold water. Bring to a boil and cook until just fork tender. Remove from heat and drain, set aside.

In a heavy non stick skillet, sauté the onions, bell pepper and mushrooms in the oil and butter for a minute or so and add the cooked potatoes. Cook until the potatoes and vegetables have browned evenly. Add the ham and toss to warm through. Adjust seasoning and serve.
