Mediterranean Style Potatoes

Ingredients:


1 pound red potatoes
1 teaspoon salt
2 tablespoons good olive oil
1 zucchini, sliced
1/2 red bell pepper, cut into 1 X 1/2 inch pieces
1/2 orange or yellow bell pepper, cut into 1 X 1/2 inch pieces
1 small yellow onion, sliced
1 tablespoon each of fresh oregano and parsley, chopped
Zest and juice of one lemon
Salt and Naughty Nelly's Deadly Twelve Pepper Blend or a few cranks of the peppermill

Preparation:

Scrub and peel the potatoes and slice them uniformly. Keep them in clean cold water until ready to boil them. When ready, put the potatoes and salt in a pot and cover with cold water. Bring to a boil and simmer until the potatoes are fork tender. Remove the pot from the stove and drain the potatoes and give them a quick rinse with cold water to stop them from continuing to cook.

In a large skillet, cook the zucchini, peppers and onion in the olive oil over medium heat until tender. Add the cooked potatoes, fresh herbs and sauté for a couple more minutes until the potatoes are hot through and the herbs fragrant. Add the lemon zest and juice and season.
