
O’Brien Potatoes
Ingredients:
2 tablespoons olive oil
1/2 cup onions, diced
1/4 cup green bell pepper
1/4 cup red bell pepper
2 russet potatoes, cooked, skin-on, 1/2 inch dice
1 tablespoon butter
Salt and
Naughty Nelly's Deadly Twelve Pepper Blend or a few cranks of the peppermill
Preparation:
In a large skillet or cast iron pan, cook the onions and peppers in one
tablespoon of the olive oil until softened and lightly caramelized. Remove them
from the pan to a warm plate and set aside.
Add the remaining tablespoon of oil to the pan and add the potatoes, Cook over
medium heat until the potatoes begin to brown. At this point the pan may be
getting a bit dry as the potatoes will have absorbed the oil, add a tablespoon
or so of butter to the pan and toss the potatoes. Continue to cook until the
potatoes are nicely browned. Add the cooked vegetables back to the skillet. Cook
for a minute or so to warm the vegetables and season with salt and
Naughty Nelly's Deadly Twelve Pepper Blend. If you like them spicy, add more
Naughty Nelly's Deadly Twelve Pepper Blend. Serve at once.
