
Potato Pancakes “Latkas”
Ingredients:
2 russet potatoes, scrubbed
1/2 medium white or yellow onion
1/2 teaspoon salt
Naughty Nelly's Deadly Twelve Pepper Blend or a few cranks of the peppermill
2 teaspoons flour
1/4 teaspoon baking powder
1 egg, beaten
peanut oil for frying
Preparation:
Peel and quickly grate the scrubbed potatoes and onions into a medium sized
bowl. Use the largest setting on your grater. Transfer this mixture to a
colander and squeeze out as much liquid as possible. The mixture will turn a
little gray if you work slowly, that is OK, but it looks nicer if you get all
the ingredients in the dish together quickly.
In a small bowl, combine the salt,
Naughty Nelly's Deadly Twelve Pepper Blend, flour and baking soda
together and then add the egg. Put the potato onion mixture back in the medium
bowl and add the egg mixture and blend thoroughly.
Heat about 1/2 inch of oil in a good cast iron pan and carefully drop two
tablespoon portions of the latkas mixture into the oil. Flatten them to a couple
inches thick with the back of your spoon and cook until nicely browned. Turn and
continue. Remove the latkas from the oil to a pan lined with clean lint free
cloth or paper towels to drain and continue in batches until done. You can hold
the cooked latkas in your oven on low while you cook them. Serve at once.
