Red White and Blue Cheese Salad

If you like blue cheese, you’ll love this salad.

Ingredients:

3 pounds new red potatoes, skin on quartered
1 teaspoon salt
4 slices bacon, diced
1 cup good quality blue cheese dressing
¾ cup Maytag Blue Cheese, or any good quality blue
2 tablespoons red bell pepper, diced
2 tablespoons red onion, chopped
Naughty Nelly's Deadly Twelve Pepper Blend or a few cranks of the peppermill
2 tablespoons parsley, chopped

Preparation:

Place potatoes and salt in a pot and cover with water. Bring to a boil and reduce heat. Cook until fork tender, drain and rinse under cold water for a short time to stop the potatoes from continuing to cook. Set aside.

While the potatoes are cooking, fry up the bacon until crispy and brown. Remove from the fat to a clean lint free paper towel to drain. Set aside.

In a bowl large enough to hold the dressing and the potatoes, combine the dressing, blue cheese, red bell pepper and red onion and whisk to incorporate. Taste for pepper and add Naughty Nelly's Deadly Twelve Pepper Blend if you like.

NOTE: I don’t add salt here because we will dress the salad with bacon bits which will bring the saltiness needed.

Add the potatoes and blend gently. Refrigerate for a few hours to allow the flavors to blend. Garnish the salad with bacon bits and chopped parsley.
