Steamed New Potatoes with Herb Butter

Steaming potatoes is a very simple procedure.  The trick is not to overcook them and how to infuse them with flavor. New potatoes are the best choice for steaming, because of their waxy texture and size. The flavor you add is really up to your own flavor preferences. You could make an herb butter like the one we talk about here or you might just like to slather on a some garlic butter.

CHEF’S NOTE: Remember to purchase potatoes of equal and uniform size so that they all cook at the same time.

Ingredients:

1 stick of butter, softened
1/2 cup chopped fresh herbs (parsley, tarragon, chives, basil, thyme, etc.)
New potatoes, as many as you need, scrubbed
Salt and Naughty Nelly's Deadly Twelve Pepper Blend or a few cranks of the peppermill

Preparation:

Combine the butter and herbs in a bowl and mix with a rubber spatula until combined. This can be done in advance and refrigerated. Soften before using if you prepare in advance.

Steam the potatoes in a covered pot on a vegetable steamer rack over a couple inches of water for about 15 minutes or until they can easily be pierced with a fork or sharp knife point.

When they are done, drain them thoroughly and put them in a bowl. Season with salt and Naughty Nelly's Deadly Twelve Pepper Blend and add 1/3 of the butter mixture and stir the potatoes to coat in the butter. Serve the rest of the butter on the side in a ramekin.
