Cucumber Salad with Sesame Seared Tuna
Thinly sliced cucumbers, red peppers, garlic, ginger, spicy jalapeno are tossed
with rice vinegar and paired with pan seared sushi grade tuna coated in black
and white sesame seeds

Lamb Lolly Pop Chop with Fresh Field Greens
Tender Spring Lamb Chops marinated in an Asian influenced glaze are grilled and
set on a bed of fresh micro greens dressed with a Vinaigrette using Chef Dean
Martin’s Oriental BBQ Sauce
Smoked Duck
Salad with Mandarin Oranges, Plum Croutons, Raspberry Vinaigrette
Tender Bibb lettuce topped with thin slices of savory smoked duck breast
Grilled
Avocado Stuffed with Roasted Corn and Tomato Salsa
Ripe Avocado halves, grilled and filled with a zesty Roasted Corn and Tomato
Salsa with a splash of fresh Lime. Topped with a Chipotle Seared Shrimp.
