Jay's Bistro is a locally owned family business which started in 1980 by Jay Witlen with his wife and life partner, Jacki. From humble beginnings at Café Columbine through the evolution of Jay's Bistro and Jazz Lounge, Jay's entrepreneurial spirit combined with Jacki's encouragement have inspired them as they strive to maintain the perfect mix of hospitality, entertainment and cuisine in their bistro for the past 27 years. The combination of family run but swanky atmosphere, fine-tuned by a professional kitchen and service staff creates their recipe for success.

Proud of their employees and their commitment to the community Jay's involvement has included chairing SOS's Taste of the National which now infuses over $100,000 into the community yearly to Jacki's contributions to the arts, including the Symphony, Opera Fort Collins, Open Stage, Bas Bleu and Fort Collins Children's Theatre to mention a few.

Chef Jay and Jackie Witlen were also gracious enough to host the Chefs4Students Chef Dinner on Monday, July 30th, 2007. See the menu and party images HERE.
